The autumn or late summer harvest of bell peppers, tomatoes, squash and zucchini is in full swing. Use them well to make many WLS-friendly dishes for family eating and cook some to stash away for the winter months to bring a bit of sunshine to your plate. These stuffed bell peppers are made with lean ground turkey, zucchini, mushrooms, tomatoes and herbs and sprinkled with a little Mozzarella. They need little more than a salad accompaniment if anything at all.
